Spicy Bean Dip

This is a simple recipe for a healthy bean dip. It can be used for dipping chips, crackers, veggies and goes good on top of potatoes, soups and stews for extra flavor.

Ingredients:

  • 1 cup kidney beans, cooked
  • 1 cup tomatoe, chopped fine
  • 1 tablespoon olive oil
  • 1/2 to 1 teaspoon chili powder
  • 1/2 to 1 teaspoon cumin
  • dash of cayenne pepper
  • salt to taste ( disregard if you are on a low sodium diet)

You can also add diced onion, garlic, or black olives to vary the taste.

Directions:

  • Puree beans in a food processor or blender, or mash with a fork until they are all mushed up and smooth.
  • Add the rest of the ingredients and puree again.

Remember that the freshest foods are the best, and even though it would be easy to open a can of beans and tomatoes, cooking them fresh from dried beans and using fresh tomatoes is a much healthier way to go. You can change the beans if you aren't fond of kidney beans. There are so many different types of beans to choose from. Chick peas, white beans, pinto beans and even black beans all work well in bean dips.
