Healthy Seafood Salad

This is a salad that can be used as a meal. You make the choice on how healthy you really want to make it. You can add or leave out ingredients as you wish. You get your Omegas, Iron, Vitamins, Minerals, Antioxidants and reduced calories with a dish like this.

Ingredients : Serves 2

  • ½ head lettuce (ice berg, romaine, green leaf, your choice)
  • Equal amount of fresh Spinach leaves
  • 1 clove fresh garlic
  • 1 good sized organic tomato
  • 4 good sized fresh mushrooms
  • 1 small onion
  • ½ cucumber
  • ½ green pepper

1 package imitation crab meat, seafood chunks, rel crab, lobster bites or cooked fish of your choice

Directions

  • Tear lettuce and spinach leaves into bite sizes
  • Dice garlic, mushrooms, tomato, onion, cucumber, green pepper and seafood
  • Spread greens on bottom of plate
  • Drop other ingredients as desired with seafood on top

Serve with your favorite dressing. Put your dressing on the side because dipping bites into the dressing instead of drowning the salad cuts down on calorie consumption and doesn't smother the taste of the other ingredients. You may even opt to make your own dressing. You can do this with balsamic vinegar, olive oil and water.


Served with crackers, biscuits, garlic toast or bread and butter.
