During the Winter months it is often difficult to get good, fresh produce. The items that grow good during the summer have to be transported in from other states, making the prices at the store go up higher than some budgets allow. However, there are vegetables that do well in the Winter, or late Fall, and these are also high in vitamins, minerals, phytonutrients and antioxidants. Some of these vegetables can be bought at lower prices because they are in season and grown by local farmers, which eliminates the overhead costs of shipping them in. Believe it or not there are types of lettuce and cabbage will grow late into the Fall and early Winter, along with root plants like turnips, rutabagas, and onions. Garlic, onions, artichokes, beets, carrots, Brussels sprouts, escarole and fava beans are all hearty vegetables that will grow well into the early months of winter. Some of the under ground ones will grow all the way through until early spring. Other ones that will survive through the first or second frost include lettuce, radishes, leeks, spinach, kale, and mustard greens. Other, not so common vegetables that are Winter proof include Chinese Artichokes, Parsnip, Prairie Turnip, Taro, Tigernut, Wasabi, Yams, Yacon and Yams. |
