Cabbage is one of the vegetables that has been grown and used for centuries. It actually belongs to the herbal family of the mustard family. There are several varieties of cabbage with the red and green being the most common used in the United States. Cabbage contains Vitamin A, Vitamin C, Calcium, Potassium, Iodine, Phosphorus, Sodium, and Sulfur. It is considered one of the healthiest vegetables.
Here are two simple, healthy cabbage recipes.
All Natural Cabbage Soup: Serves 4
Ingredients

1 good size Head of Cabbage
-
1 medium onion or several small green onions
-
1 tablespoon minced garlic
-
3 medium red potatoes
-
1 package onion soup mix
-
1 stalk celery
-
2 small carrots
-
2- 3 medium organic tomatoes
Instructions:
-
Wash all vegetables
-
Peel carrots, onion, and remove outside leaves of cabbage (do not peel potatoes)

Dice all vegetables except cabbage
-
Tear cabbage leaves into small bite size pieces
-
Combine all ingredients in large pan with 6 cups of water, bring to boil, then simmer until all veggies are tender.
Simple Cabbage Rolls: Serves Four
Ingredients:

1 small or medium size head of cabbage

1 tablespoon mince garlic
-
1 pound of lean ground hamburger or ground turkey
-
1 quart of organic tomatoe or vegetable juice
-
1 medium sized onion
-
1 package onion soup mix
-
2 eggs
Instructions:
-
Wash and peel cabbage
-
Peel and dice onion
-
Mix thawed meat, onion soup mix, eggs, onion and garlic and form into oblong balls
-
Wrap cabbage leaves around and secure with toothpick
-
Place in pot and pour tomatoe or vegetable juice over the top and add two cups of water
-
(more may be need to be added later) Boil or Bake until Cabbage is cooked.
Note: Onion soup mix is used in place of a bunch of different seasonings, including salt because its sodium count is much lower than most seasonings.
