Soups are a favorite for dinner, all
year long but especially during the Fall and Winter months when the
temperatures start to plummet and the snow starts to fall. Here you
will find a healthy, hearty potato soup that will warm you on those
chilly days
Ingredients: Serves 4
- 3 or 4 small red potatoes (washed and
cubed)
- 1 good sized carrot (washed, peeled and
diced)
- ¼ green or red pepper (washed and
diced)
- ¼ head fresh broccoli (washed and
diced)
- ¼ head fresh cauliflower (washed and
diced)
- 1 small onion (peeled, washed and
diced)
- 1 stalk fresh celery (washed and diced)
can substitute 1 teaspoon fresh ground celery seed
- 2-3 fresh mushrooms (washed and diced)
- 1 can condensed low fat milk
- 3 cups of water
- 2 tablespoons unsalted butter or low
fat margarine ( or olive oil, your preference)
- ¼ teaspoon sea salt
- ¼ teaspoon Mrs. Dashes table blend
seasoning
- 1 teaspoon fresh garlic
- 2 – 4 slices of low fat swiss cheese,
farmers cheese, Velveeta or cheddar (according to your taste)
Directions:
- Bring water to boil
- Add all vegetables and seasonings
- Cook until Veggies are tended
- Add milk (and a little more water if
necessary)
- Bring back to boil and then reduce heat
- Add cheese and butter, let simmer for
15 to 20 minutes
We serve it with crackers or just bread
and butter on the side, however it can be served alone or with your
favorite bread product for dipping. You can substitute non-fat dry
milk, 1% or 2% or skim milk to help reduce fat and calories.
