Green Soup

The reason this is called “Green Soup” is because most of the indgredients are green. I guess if you wanted to you could call it “Red and Green Soup” since there are a couple of red items in it too. It is a really good soup, healthy, and similar to the “Cabbage Soup Diet” that is good for fast weight loss. The intention of this soup is not to lose weight, but to eat healthy.


Ingredients: Serves 4

  • 1 small head of cabbage or ½ large head of cabbage (chopped or shreaded) (you can also use the bags of coleslaw mix if you are in a really big hurry.)

  • 3-4 green onions (diced)

  • 1-2 stalks fresh celery (diced)

  • ½ green pepper (diced)

  • 4 small red potatoes (diced)

  • ¼ red pepper (diced)

  • 1 large tomato (diced)

  • 1 cup fresh mushrooms (diced) (optional)

  • 1 pound diced beef or ground beef (optional) chicken or turkey can be used if desired

  • ½ cup minced garlic (I buy the jar of already minced garlic)

  • 1 package onion soup mix

  • 2 beef boullion cubes (low sodium preferred)

  • 1 small can tomato sauce (low sodium preferred) (optional for taste)

  • dash of sea salt (optional)

  • dash of pepper (optional)


Directions: combine all ingredients in large pot with 8 cups of water, bring to rolling boil, reduce heat and cook until cabbage and potatoes are tender. You may want to add more liquid if the soup is thicker than you desire.


Serve hot, with unsalted saltines, whole grain toast or your choice of low sodium, flavored crackers. We serve it with a few slices of low-fat cheese, some green olives and Pita bread on the side.
