Buying the Best Fresh Vegetables

Buying fresh vegetables, as I have stated in other articles, is the healthiest choice. But you need to know exactly what to look for. In some groceries you see the trays where they have cut up vegetables for you. You also see the baby carrots in these trays, and in packages along the produce aisle. I recently read that the baby carrots, unfortunately are not grown that way. They are cut and shaped from pieces of regular carrots that are crooked, or may be partially rotted on one end. Don't buy these baby carrots.

In the article it talked about what they do to preserve these baby carrots. It pointed out that the carrots will start turning white on the outside if they are not eaten right away. I noticed this before and just though it was a normal process, but this article says the reason they turn white, is because they add extra chlorine and other chemicals to keep the carrots fresh since they no longer have their own skin to do this.

This made me wonder about these trays that are made up with the baby carrots, cut celery, trimmed radishes, cut up peppers and other cut veggies. If they are doing this to the carrots, and these trays are probably made at the same warehouse, then are they doing it to the other veggies in the tray also?

Always buy uncut, unpeeled veggies. This way you have a better chance of getting the freshest vegetables possible. Just as our skin protects our insides, so do vegetable skins protect theirs insides, the part that we are going to eat.
