Tuna Stuffed Pitas

Ingredients: Serves two
2 Pitas sliced in half and opened
Tuna salad ingredients:
1 can drained tuna in water
1/4 teaspoon minced fresh garlic
1/4 teaspoon minced onion
1/4 cup diced organic tomato
1/4 cup diced organic cucumber
1 Tablespoon lowfat Salad Dressing or Miracle Whip (Lite Ranch dressing can be substituted for a different taste
1 Tablespoon chopped black olives (optional)
1 teaspoon drained relish
1 teaspoon chopped green olives
1 teaspoon feta cheese
Several leaves of romaine or green leaf lettuce / chopped
1 teaspoon chopped organic green pepper (optional)
Mix all ingredients and spoon into Pita Pockets, served with white or brown garlic rice or fresh fruit sections.
