Tuna Stuffed Pitas

 
Ingredients: Serves two
2 Pitas sliced in half and opened
Tuna salad ingredients:
  • 1 can drained tuna in water
  • 1/4 teaspoon minced fresh garlic
  • 1/4 teaspoon minced onion
  • 1/4 cup diced organic tomato
  • 1/4 cup diced  organic cucumber
  • 1 Tablespoon lowfat Salad Dressing or Miracle Whip (Lite Ranch dressing can be substituted for a different taste
  • 1 Tablespoon chopped black olives (optional)
  • 1 teaspoon drained relish
  • 1 teaspoon chopped green olives
  • 1 teaspoon feta cheese
  • Several leaves of romaine or green leaf lettuce / chopped
  • 1 teaspoon chopped organic green pepper (optional)
 
Mix all ingredients and spoon into Pita Pockets, served with white or brown garlic rice or fresh fruit sections.
