White Bean and Chicken Soup

Fall is here and the weather is getting chilly. It's time for some nice hot soups to ward of those pesty flu and cold bugs and warm your tummy. White Bean and Chicken soup is a nice change from the ordinary.
 
Ingredients: Makes four servings
  • 2 cups white beans
  • 2 cans low or no sodium chicken broth
  • 1 small green onion - diced
  • 1 small boneless chicken breast - cubed
  • 1 tsp minced garlic
  • 1/2 cup fresh or frozen spinach
  • sea salt and pepper to taste
  • 1/4 cup diced tomatoes (optional)
Directions:
  • Rinse and soak beans for  1/2 hour
  • Bring 4 cups of water to rapid boil
  • Add beans, onion, garlic, chicken, salt and pepper.
  • Cook on medium heat 1/2 hour
  • Add chicken broth and spinach, and tomatoes(optional)
  • Cover and cook until beans are done

You can sprinkle parmesan cheese on top and serve with crackers or hot biscuits.
