Tuna Stuffed Tomatoes
Ingredients: For (2) servings
-
1 good sized fresh tomato
-
1/4 teaspoon fresh garlic ( diced)

1/4 cup fresh onion (diced)

1/4 cup fresh green pepper (diced)

1 tablespoon low fat salad dressing or mayonnaise
-
squirt of mustard
-
1 can tuna in water (drained and rinsed)
(Note: Organic fresh vegetables are best, they have more nutrients, but if you can't afford or find them, look for the best in fresh at your grocer, just remember, all those vegetables have been handled by other people and may have been sprayed so wash them good before eating)
Directions:

wash all vegetables and dice
-
drain and rinse tuna
-
cut tomato in half and scrape insides out
-
combine all diced vegetables including what you took out of the middle of the tomato

add salad dressing or mayonaisse
-
add just a squirt of mustard and mix everything together ( I put mine in the blender on chop)
-
spoon into tomatoes and serve on a bed of lettuce with unsalted saltines on the side
This makes a light lunch or dinner, or even a mid afternoon snack. You can also add other light side dishes and some slices of cheese.
