Cucumber Tomato Salad
 
This is a very light, tasty and nutritious salad. The benefits from the vegetables used include heart health, help reducing cholesteral, help with weight loss, combative for cancer cells, and help fighting off infections just to name a few. With such nutrients as Vitamin C, B6, Calcium, Phophorous, Potassium, Iron and Selenuim, how can you go wrong.
 
Ingredients:
  • 1 - 2 medium sized tomatoes
  • 1 good sized cucumber
  • 1 medium onion
  • 1/2 to 1 clove of diced garlic
  • 1/4 cup water
  • 1/4 cup apple cider vinegar ( non homogenized) or 1/4 cup balsamic vinegar
  • 1/4 cup olive oil
 
Directions:
  • Wash all vegetables, peel cucumber and onion
  • cut all vegetables in small cubes
  • combine together in meduim serving bowl
  • sprinkle garlc on top
  • combine vinegar, oil and water in blender or shake in salad dressing decanter and pour over the top
  • may add a little salt and pepper to taste
  • refrigerate for 1/2 to 1 hour ( until well chilled0
Serve with your favorite main dish , with other salads / fresh vegetables , cold sandwiches, or by itself
